how do you keep fruit fresh on a cake?

when i have cakes from a bakery, the fruits taste fresh even after a few days. i noticed the fruits are coated with some sort of gel or something.
i made a cake like it a couple weeks ago but the fruits became limp after a couple days. what should i do to the fruits to keep them fresh?

Maybe they're coated with FRUIT FRESH? It's a preservative used for canning and to keep cut fruit and veggies from oxidizing. See the link below. You can buy it at any grocery or Walmart.

Also, you can dip the cut pieces of fruits like apple in lemon juice to keep them from turning brown. The low pH acidity of citrus vitamin C prevents aging and acts as anti-oxidant. Fruit Fresh also contains Vitamin C!
