Yes, there are really gel and air (pressurized gas) pockets in the shoes for cushioning.

I don't know that the gel is fluid enough for you to readily remove. Yes, you could pierce an air pocket. However, I would also expect things to be a bit compartmentalized so that one puncture somewhere doesn't utterly take out the entire shoe.

With some shoes like the Air Max, and some Asics models, you can fairly readily see the pockets from the outside of the shoe.
